Italian Chocolate Mascarpone Cake

This cake is going to become one of your go to recipes. It's easy, tasty, not too sweet, light, fluffy, moist and has no butter or oil! Could I have added any more positive adjectives in that line!?!?


This is just another of my simple Italian recipes that I like to share. You had me at chocolate as one follower wrote on my live video!


So without further waste of time... here's the recipe!


Italian Chocolate Mascarpone Cake

4 eggs

175 gr sugar = between 3/4 and 1 cup

250 gr mascarpone =about 9 oz. (most packages/containers are 8 oz. Just add an oz of milk or yogurt)

150 gr flour = 1 1/4 cup flour

50 gr unsweetened cocoa = 1/2 cup

4 gr baking powder= 1 tsp

5 gr vanilla extract= 1 tsp


  • eggs with sugar and mascarpone

  • add vanilla

  • mix flour cocoa and baking powder together

  • add dry mixture slowly to wet mixture

Pour into an 8 or 9 inch springform pan or a bundt pan.

Back for about 30 min on 350F/180C or until toothpick comes out clean.

Top with powdered sugar.


  • if you can get your hands on mascarpone... try cream cheese.

  • If you want to make it a little "fancier" take some extra mascarpone and mix with some raspberry jam. Cut cake in half (carefully!) and spread mixture between the layers! Oh yummmm! or mix the mascarpone with a little sugar and make the cheese and raspberry separate layers... either way is tasty!


Now wasn't that simple???

No need to be melting chocolate in a double boiler when you can have a perfectly yummy cake using unsweetened cocoa! It's simpler and I'll bet it's a bit healthier too!
